From the roaster
Most decaf is an apology. This is not. Good Night, Crow is a Colombian decaffeinated with the sugarcane (EA) process, which uses a compound derived from sugarcane to gently strip the caffeine while leaving the flavor almost entirely intact. No harsh chemicals, no flat, papery cup.
The result is a genuinely good coffee that happens to be decaf: fudgy, with toasted walnut and a ripe-plum sweetness. We roast it to a medium so it works for an after-dinner pour-over or a late espresso that will not keep you up. The whole point is that the evening cup gets to stay an evening cup.
