Most roasters keep the curve to themselves. We do not. When the drum is running you can watch the temperature climb in real time, and every batch we drop stays on the log with its first crack, development ratio, and drop temp. Honest coffee should show its work, all the way down to the roast.
The drum is resting
When the next batch hits the drum, its curve draws itself here in real time. The drum may be quiet, but the plan is not: every coffee we roast has a published profile below, the exact curve we roast it to.
The roast profiles
The drum is not always running, but the plan always is. This is the target curve we roast each coffee to: where we want first crack, how long we hold development, and the temperature we drop it at. When a live batch is on the drum, you will see its real curve climb above. Until then, here is the recipe.
