From the roaster
Pink bourbon is having a moment, and lots like this are why. Grown by a single producer in the mountains of Huila, this is a coffee with the structure of a great washed Colombian and a honeyed sweetness that feels almost like a natural process. Red apple, orange blossom, and a finish so clean it pulls you back for the next sip.
We roast it just past light, to light-medium, to keep the fruit bright while letting a little more body come through. It is the crowd-pleaser of our single origins: interesting enough for the coffee-obsessed, friendly enough for everyone else.
